Baked Halibut
With Warm Potato & Chard Salad

Cooking with Wild Alaskan seafood and homegrown greens is simple, vibrant, and hands-on. Here’s a delicious way to combine both for a flavor-packed, nutrient-rich meal

INGREDIENTS

1 lb small yellow potatoes, quartered
Salt & black pepper, to taste
½ bunch rainbow Swiss chard, roughly chopped
2 cloves garlic, finely grated
1 Meyer lemon
3 Tablespoons olive oil
⅓ cup fresh dill, roughly torn
2 (6 oz.) portions Pacific halibut, defrosted
Grated parmesan, for serving (optional)
Fresh flowers, for garnish (optional)

Heat oven to 400℉. Pat defrosted halibut dry, season with salt, and let sit at room temp while you cook.

Meanwhile, boil potatoes in well-salted water 10 min. Add chard and cook 5 min more.

In a large bowl, mix garlic, lemon zest, olive oil, pepper, flaky salt and optional parmesan.

Bake halibut 10–12 min, until opaque and flaky.

Remove halibut from oven, squeeze over fresh lemon juice and let rest.

Drain potatoes and chard; add hot mixture to bowl and toss. Fold in dill.

Plate potatoes, add halibut. Finish with grated parmesan and garnish with flowers, if using.
